Where is Pernod Absinthe from?
Pernod Absinthe's story begins not in France, but in Couvet, Switzerland, around 1792, with a recipe attributed to Dr. Pierre Ordinaire. Henri-Louis Pernod, whose name would become synonymous with the spirit, then acquired the recipe and, with his father-in-law, opened the first absinthe distillery in Couvet in 1797 before establishing a larger one in Pontarlier, France, in 1805. This makes Pernod an old classic; it was the most popular absinthe brand throughout the 19th century until its ban in France in 1915. The brand is known for essentially defining the absinthe category in its heyday. After the nearly century-long ban, Pernod Absinthe was reformulated and reintroduced, aiming to evoke the original recipe while complying with modern regulations, and it continues to be produced using wormwood from the Pontarlier region.
