Valdespino Inocente Fino Sherry stands apart because it's one of the very few finos still fermented in traditional wooden casks with indigenous yeasts, and the Palomino grapes are sourced entirely from the esteemed Macharnudo Alto vineyard. This commitment to old-school methods, including an unusually long aging process of about ten years under flor in a solera with ten criaderas, results in a remarkably complex and characterful sherry.
