The Rabo de Galo
The Rabo de Galo is a personal favorite and Brazil's brilliant answer to the Manhattan. It's deceptively simple, letting the barrel-aged cachaça's earthy funk shine against rich vermouth and the pleasant bitterness of Cynar. That expressed lime oil is the critical final touch.
Recipe Ingredients
1/2 oz. (15 ml) Cocchi Vermouth Di Torino Add to Cart
1/4 oz. (7.5 ml) Cynar Add to Cart
Expressed lime oil and lime peel for garnish
Recipe Directions
2. Combine the cachaça, vermouth, and Cynar in a mixing glass.
3. Fill the mixing glass with ice.
4. Stir until properly chilled.
5. Strain into your chilled glass.
6. Express the lime oil over the drink, then drop in the lime peel as garnish.
