Rabo de Galo
For me, the Rabo de Galo is proof that cachaça is for so much more than Caipirinhas. This drink is a stunner—spirit-forward, complex, and surprisingly easy-drinking. The aged cachaça, rich vermouth, and a touch of Cynar create something special with just a simple stir.
Recipe Ingredients
1/2 oz. (15 ml) Cocchi Vermouth Di Torino Add to Cart
1/4 oz. (7.5 ml) Cynar Add to Cart
Expressed lime oil and lime peel for garnish
Recipe Directions
2. Add ice and stir until properly chilled.
3. Strain into a chilled rocks glass over fresh ice.
4. Express lime oil over the drink, then drop in the peel.
