Penicillin -- Variation #1

This is my preferred build for the Penicillin, a true modern classic. That sharp bite of fresh ginger is beautifully countered by the honey and lemon. The defining touch, though, is floating a wonderfully peaty Islay Scotch right on top for that irreplaceable smoky aroma.

Recipe Ingredients

3-4 slices of ginger, muddled
2 oz. (60 ml) Monkey Shoulder Blended Malt Scotch Whisky Add to Cart
3/4 oz. (22.5 ml) honey syrup (3:1 honey:water)
3/4 oz. (22.5 ml) fresh lemon juice
1/4 oz. (7.5 ml) Laphroaig 10 Year Single Malt Scotch Whisky Add to Cart
Candied ginger for garnish

Recipe Directions

1. Grab your shaker. Muddle the ginger slices.
2. Add the Monkey Shoulder, honey syrup, and fresh lemon juice.
3. Fill your tin with ice. Give it a hard shake until well-chilled.
4. Double strain into a chilled rocks glass over fresh ice.
5. Carefully float the Laphroaig on top.
6. Garnish with candied ginger.
