The "Spot" branding originated from Mitchell's practice of marking casks of different ages with a spot of colored paint, with yellow designating a 12-year-old whiskey. Bottling of Yellow Spot ceased in the mid-20th century but was revived in 2012, meticulously recreated using archival recipes and maturation techniques, including the use of Spanish Malaga wine casks alongside bourbon barrels and sherry butts. This triple-cask maturation imparts a unique sweetness and complexity, distinguishing it from its sibling, Green Spot, and it's produced at the Midleton Distillery in County Cork. Known for its rich, multi-layered flavor profile with notes of honey, peach, and pot still spices, Yellow Spot is a celebrated return of a classic Irish whiskey.
