Since many of those original rums are no longer made, he created this blend primarily from Trinidadian aged rum, with additional sugarcane and molasses distillates from Guyana and Santo Domingo to capture those elusive flavors. It's not an old classic, but rather a newer creation from a brand, Hamilton Rum, known for transparency and quality, offering spirits free from added sugars or flavorings. This particular rum undergoes a slow, five-day dilution process with filtered well water at the Five & 20 Distillery in Westfield, NY, to preserve its delicate aromas and bring it to a precise 87 proof, a strength bartenders indicated they preferred over typical 80 proof clear rums.
