Chamomile-Infused Cocchi Americano
This is one of my favorite modifications. A simple chamomile infusion gives Cocchi Americano a beautiful honey-and-apple character that softens its bitter quinine backbone. It’s a subtle change that completely re-calibrates the spirit, making it a secret weapon for something like a White Negroni.

2. Seal the jar. Let it infuse at room temperature for two to four hours.
3. Strain the liquid through a fine mesh sieve, removing the chamomile. Bottle for storage.
