Tom Collins -- Variation #2
Building a better Collins starts with the right gin, and for my money, you can't beat the character of an Old Tom style. This collection features the specific craft spirits I reach for to build this classic highball, swapping the typical London Dry for a gin with more weight and a subtle botanical sweetness that creates a rounder, more integrated drink. The Anders Erickson approach to this cocktail isn't about re-invention; it’s about dialing in the details with precisely chosen cocktail ingredients to make the best possible version. Recipe Ingredients
1 oz. (30 ml) fresh lemon juice
1/2 oz. (15 ml) semi-rich simple syrup (1.5:1 sugar:water)
2-3 oz. (60-90 ml) soda water
Lemon wheel and cocktail cherry for garnish
Recipe Directions
2. In a shaker, combine the Old Tom Gin, fresh lemon juice, and semi-rich simple syrup.
3. Add ice to the shaker and shake until well-chilled.
4. Strain the mixture into your prepared Collins glass over fresh ice.
5. Top with 2 to 3 ounces of soda water.
6. Garnish with a lemon wheel and a cocktail cherry.
